At work I keep my pockets and belt empty of anything that could dent or scratch a car, so its not feasible to carry. I have a utility knife and various blade-holding implements in my toolbox, but I generally just grab a loose razor for quick hacking.
When Im working on the house I almost always have a retractable utility knife on me. Generally a replaceable blade style, but I have no problem using a snap blade knife if thats what I find first.
If Im camping I have some sort of cheap folding knife on me. I tend to lose them, so I try not to spend more than $10. I have been meaning to invest in a high quality fixed blade knife for outdoors activities though. Having used and enjoyed Tonebone's TAK-1, I might attempt to hunt one down for short(er) money.
My kitchen knives are a whole different story. I have a few hundred dollars worth of knives. I primarily use a Calphalon Katana series 7" Santoku and occasionally a 8" chef's knife from the same series.

See, I'm the other way around. I have all sorts of great knives, but my kitchen knives are a cheap set I found somewhere. I don't cook all that much and I use mostly an 8" Santoku. I keep it sharp and it does just fine. Although, I have used some of my nice non-kitchen knives in the kitchen for short stints of duty.

Even though I dont cook nearly as often as I used to I still like to have a good knife or two that I know I can trust. Also good for the zombie apocalypse.

Same philosophy that I have, but I like to take those knives with me, rather than leaving them in the kitchen.

I have a solid 18" steel bar under my passenger seat. I have a plethora of dangerous goodies at work. Im rarely not at home, at work, or in my car.

You can't cut stuff with a steel bar - that doesn't qualify. I'm not talking about stabbing people, but using the knife as a tool daily.

Oh, I forgot we weren't only talking about EDC. In that case, I have a few of those mall-bought ornate decorative swords that would disintegrate if you tried to cut butter with them, a few daggers/knives varying from mall-style to real, a solid handmade (not by me) Bat'leth that would probably be quite a formidable weapon in use, and a d'k tahg that is also decent.
I like this stuff but not enough to have bought most of them. Most of them were gifts.

EDC is a Leatherman Z-Rex and the Buck folder, among other things.

Nice! Did not know you were enough of a Trekkie to own those.
