Mk5 community is the same way. Every time someone posts a stock car they are told to lower it. Every time someone posts 1.5" lowered, they tell them to drop it more. That's why I don't really hang out on vwvortex, because they are mostly just sheep there. Same at golfmkv.com about the lowering...

I atrribute mine to a loose fuel fitting, just enough to let pressure out overnight but not enough to actually leak. This is the most likely cause. Depending on your car, it may help to turn the key to "On" for a few seconds before turning it to "Start", as the fuel pump may run...

The default configuration works fine for me. It works fine for me too, but lots of configurations would work fine for me. Rev hang is annoying but I still get to my destination. I am convinced that the reason is that I pay attention to what the car is doing, not to the pedals. If it is DBW I've heard tons of issues with rev hang... I have DBW and rev hang SUCKS! I could even get used to it if it was predictable, but it's totally inconsistent. There's no discernable pattern to tell me when it will hang and when it won't, except that it never hangs when the engine is cold....
