Good question. I vaguely recall some rationale, but it's been so long since I watched the special features that I can't think of it.
Maybe because the column shifter is commonly thought to be for automatics only? I guess they had to dumb it down for the general public.

In Skyfall (and Goldfinger before that), the shifter in Bond's Aston Martin DB5 flips up to reveal an ejector button.

Duel is one of my favorites. I'm not sure I'd say either of those are quite non-automotive though. In Duel the truck may be the antagonist; it is written as a character and made to seem alive even though a man exists in the driver's seat and seems to agree with the truck's attitude. I guess in Starsky & Hutch the car isn't quite as important.
