As much I don't like chevy, the Orlando comes in 6spd

According to a review at Truth About Cars, we have a crash test regulation it couldn't meet without knee airbags, which would have made it too expensive.

How much would it cost (roughly) to add a manual to something like a Tribeca? Any ideas?

I drive an Outback now and love that car but would really love a third row of seats. At least I know I'm not (completely) alone in that!

Probably a lot, considering it's a newer car. You would probably be better off getting something like a Mazda 5.

That sounds like it might be a more difficult project than some of the others mentioned. Also I imagine that the parts may be more expensive.

The 3.0 engine was offered with a manual transmission, according to Wikipedia, but a half-assed effort did not turn up exactly which model was offered that way.

If true, that means there is a transmission, flywheel, and clutch that will fit directly. Hopefully the donor vehicle's clutch pedal assembly, shifter assembly, and console fit too. Because it's AWD you'll need a rear differential to match the transmission. Depending on how integrated the computers in a Subaru are, it may be possible to mix-and-match modules or it may be necessary to have some custom programing done.

How much would it all cost? Maybe someone else can venture a guess but I can't even ballpark it without digging in deeper. Hopefully someone here knows more about Subarus and can clear up some of the uncertainties above.

We live on a steep hill that doesn't get plowed so was hoping for an AWD. Hopefully the Mazda5 with snow tires would do the trick but it's hard to know without buying it first!

What about its cousin, the CX-5? Is that not the size you're looking for? I think it can be had with AWD.
