Quick Question About Filling Up at the Pump
I've read many a-time that you are only supposed to fill up your tank up through three (3) automatic click-offs of the gas pump. Now besides the obvious reason of spilling gasoline, what is the benefit of doing this as opposed to topping off your tank to the very brim?

Since my answer's not in the poll, I'll answer everything in the post.
I try to fill up starting at about 3/4. It insulates me from price shocks because I can always put a purchase off for a while until the price shock subsides and because I can pick and choose my time to fill up when my travels take me past the best gas prices in town per gasbuddy.
The reason I most often see advice against topping a car off is because, ostensibly, you can get the charcoal canister full of vapors and it stops working. I don't know how accurate that is, or even if the charcoal canister exists. I've never had any trouble with it on my old barge, but YMMV.

I used to overfill until it overflowed out the fill hole, but then I read something that said not to fill it after the first kick-off since, after that, it starts overflowing outside of the tank and it won't go back into the tank. Not sure how that works or where it goes but I haven't tried overfilling it since then and the metre still goes above full

Topping Off
Another reason not to top off is that many modern pumps will suck out that spill over. You pay for gas that doesn't even make it into your tank. Stop after the first click. Pay with a credit card. And don't bother with the cents- BTW, some credit cards and gas cards will reward you with the remainder cents to the nearest higher dollar.
