The e-brake light on my MPV turns on when I brake, then turns off when I hit the gas. Weird?

That's not only there to tell you that the parking brake is engaged. It's also there to warn you of main brake system malfunctions. Do not continue driving it until you've identified and fixed the problem, it may be dangerous. Generally coming on like that when you brake and turning off when you don't brake is supposed to mean that there is insufficient hydraulic pressure in the system...could be a bad case of air in the system, could be low brake fluid, could be a failing hose/cylinder/caliper, could be a leak. In a modern car it could also mean other less scary things, but until you've identified it you don't know.

Huh, learn something new everyday. lol. Don't worry, my MPV is not going anywhere right now with a timing belt that's skipped a tooth and is soaked with oil probably from an oil leak from a bad camshaft seal.
